On this week’s menu we have Mini Chicken Pot Pies. Easy to make and delicious.
What you need:
– 1 can of biscuits
( Any will do. I use Pillsbury Honey Butter biscuits)
– Frozen mixed vegetable blend (2 cups)
– 1 can cream of chicken soup
– 1 cup of shredded cheddar cheese
– 2 cups of cooked chicken breasts diced
Preheat the oven to 400 degrees. Grab a large bowl and combine chicken, soup, frozen veggies, and cheese. Lightly grease a 12 cup muffin tin and press one biscuit into each cup on the bottom and up the sides. Spoon in the filling mixture into the biscuits. Bake in the oven for 15 minutes. Let cool for about 3 minutes and enjoy!
